Just decide to stick to a strength, dex, or magic build and take whatever weapons come your way. If you don't want to do that and you have a large amount of souls burning in your pocket, spend it on upgrade materials (early on this means titanite shards) or consumable items. Keep the "soul of a [whatever]" items in reserve for when you want to make an immediate major purchase.
Two questions:

What does the equipment icon/stat next to Equip Load mean? (looks like a foot in front of a pentagon)

How do I want to be spending my humanity? Seems like the most limited resource. I take it I want to rekindle every bonfire I can?

I think the icon is magic resistance? And if you don't care about multliplayer, humanity doesn't really mean much so kindle away. Being human increases your item find and resistances but being human also means getting ganked by an invader.
