One thing that helps a lot early is understanding that you have an explicit statistic listed on shields, stability. That dictates how much stamina you lose from getting hit. At each threshold (50,60,70,80) you get to a different tier of hit that you can take without being knocked on your ass and damaged. The sooner you get a shield over 60, the sooner you'll stop sweating the small stuff as much. Turtling is bad, not just because it makes you look timid and sad but because you recover stamina a lot more slowly with your shield up. So take a hit, drop your shield, and pick it back up for the next hit. Or get out of the way. But don't just stand there getting hit and expect good results.
Another thing is poise. This is listed under each armor piece, with light armor pieces having 0, medium having some, usually a single digit, and heavy having double digits of poise. Poise is basically the type/amount of hits you can take without being staggered or interrupted. It's worth experimenting with adding a little, medium, and lots of poise (50+ is a great place to be) in order to see how much of a margin of error you have for when you mis-time attacks. Because if getting hit once is often bad, getting hit and then staggered and hit some more is far worse.
