There is a delightful don't-give-a-fuck-ness about the whole affair. Yes, it's retarded that your units randomly attack and cast spells at the enemy.

If the alternative is for them to be smarter, then let them be smarter, but no matter how stupid they are it's great that they take care of their own busywork, because that leaves you free to spend all your time doing something interesting like moving a whole army. Moving armies of semi-predictable idiots is fun!

It makes more sense in Dominions, where there's a more complicated, less obviously random (but still pretty squirrelly) priority system controlling which spells a mage casts in a given situation, and on top of that there's a fully 2D battlefield on which units may move in or out of a spell's range, further controlling what happens. For instance you can know that if you put your death mages way in the back then they'll most likely raise lots of skeletons, while if you put them in the front, they'll probably try to use high-powered direct-damage attacks that will usually fail. In CoE3 dudes just cast whatever on whoever all the time and it's pretty silly. But I claim the worst thing is still that you can't pick which spells they know, rather than that you can't pick which spells they cast. Because that means you mostly can't design one army to counter another, aside from making your army as big as possible.

It's totally ridiculous that my witch and will o' wisp can permanently charm an enemy unit every other combat round.

The one that broke my latest attempt to conquer a map in this game was Soul Drain (I think). Have you seen Soul Drain? The enemy necromancer guy basically dropped a nuke on everybody. Oh god and then my troll king got mind-controlled. The king himself, leader of his nation and the strongest monster in the world, semi-randomly changing sides! How in the heck do you counter that! I guess you bring in your own nuke-dropping mage and hope he uses his ultimate spell before the enemy mage uses one?? Or better yet two or three nuke-dropping mages. More units means more power. :(
