The lava I've used, if dumped in a straight stream onto a large, flat floor, would (I think) spread out over the floor several blocks in every direction, and then stop. I don't think it would fill the room. I guess that in general, liquid streams that are totally horizontal lose their thickness as they propagate, and eventually dwindle to nothing. (Liquid streams that are totally vertical, on the other hand, magically generate further liquid directly beneath them until an obstacle is encountered. So it's definitely not a realistic model, but it's a pretty fun one.)
