CPU: AMD Phenom II X4 965;
i5-750 is $19 more, -30W idle power consumption, +10-20% on every benchmark.

I don't recognize that kind of performance lead from the tests I've read, which show the Phenom 965 and the i5 to be pretty much equal (at least at higher resolutions) @ stock clock frequency. Though the i5's lower power consumption is a good point and strong argument.
Still, the AMD is cheaper as are the AM3 motherboards, and if the computer isn't running 24/7, the power consumption is less important.

PSU: Corsair 850HX.
Two hundred dollars! It takes about $2k in parts to get the PSU calc to recommend anything over 600W.

Indeed, you'd need a monster setup to really need the 850HX, which actually yields over 1000W without breaking a sweat. However, especially if you're going to overclock, and especially with the ATi video cards, I wouldn't get anything under 600W. Using smaller, cheaper PSUs running at close to max capacity may result in instabilities and fried components, it's better to have a larger PSU that pretty much just idles all the time.
Power supplies are always a boring component to spend money on, but buying a quality unit is a good investment, as you won't need to replace it the next time you upgrade all the other computer components.
