Actually (hmm) I think the reason people use multiple guitars is because different guitars sound different.

Or they might use multiple guitars for the reason that I used to which is because strings get broken and you don't want to spend the time replacing them onstage.

With the exception of Sonic Youth I don't think anyone keeps extra guitars around because of alternate tunings.
