I liked those three, I liked Hudsucker Proxy and Blood Simple was OK. I think generally their movies are pretty good, with one exception:

Miller's Crossing

I kept seeing bits and pieces of this, I didn't understand what was going on. When I worked in a video store I brought it home one night, watched it all the way through, and that made all the difference. This is their best film by far, better than any other two of their films combined. With the name recognition they get now, if they released this movie today it would sweep the oscars. As it is this is one of those not-so-hidden gems people will still be watching long after Raising Arizona is forgotten.

...Fargo was big because it helped make it ok to do regionalist stories again, the accents and stuff work within the boundaries of the film. For a few years before that you had 4 accents: "New York," "The South," "Valley Girl," and "American Blank," that fucking flatspeak every dialogue coach teaches.
