The sheriff doesn't immediately have any new quests. He will tell you thanks, if you save him, and then start teasing you about not having disarmed the bomb yet. I don't know what he has for you if you disarm the bomb. I was told that he'll give you a house (which is why I restarted so many times to save him in the first place). Additionally, with the fallout from the mortgage crisis, new home owners in our own reality will be forced to perform acts of cunning and strength like disarming nuclear weapons to prove they are worthy homeowners.
