Judging from the rest of the demo, the game was set to minimal difficulty, possibly to a level that won't even be available in the game. Enough of the mechanics are carried over from previous games for that to be immediately recognizable. Same as tranq gun on very easy in previous games, IIRC.
You remove your current camo by shaking the sixaxis controller. Why would I want to ever remove my camo?
Apparently there will be "gameplay reasons". One suspects it is the desperate search for a use for the Sixaxis NOT A WII feature.

Snake can lie on his back to shoot. It's a neat new trick but why not just turn around and then go prone? That's what I always did.
Because it's physically impossible to shoot at much of an upward angle in the prone. I'm not saying that dictates what MGS does, but it's an understandable move. And it looks really cool. I suspect it will be like the splinter cell split jump.
Why does the P90 fire so slow?
I think it was firing at the rate he wanted it at. It probably has an auto setting.
