You know, I honestly thought that he ended up begrudgingly liking "Coney Island Baby," and I also forgot that he like "Astral Weeks" (which I think is sort of a copout, because Van Morrison is a big whinging girl). I guess it's been way too long since I read that stuff. Unfortunately, that's going to have to be the answer to your question, too.
As an aside, "Coney Island Baby" is okay1, but I much prefer "Berlin," another strangely despised album, in my mind. Berlin is an album that was not only critically divisive to this day, like MMM, but doesn't still seem to have anyone as in love with it as the later. I dunno, I think it's great, although not "Street Hassle," which desperately needs a CD rerelease.
Whinging ignored for a minute, I think Morrison has his place. His longer pieces like "TB Sheets" or the title track of "Saint Dominic's Preview" are pretty insane. However, a lot of what's great about "Astral Weeks" has nothing to do with Morrison, though, and rather the work done by a gang of bored jazz session players that were basically instructed to do whatever they felt like. I think the biggest problem with Morrison is that his songs are enjoyed by lame people rather than actually being all that lame in and of themselves. There is nothing aggressive or weird or subversive enough to scare them away. Also Morrison sings about a girl dying from TB almost exactly the same way he sings about Fats Domino, so there might be a problem there, too.
It's a lot like Dion's "Born to Be with You" -- a beautiful and complex album (featuring probably the last great Spector production aside from "Death Of A Ladies Man," which is perfect, if Spector is your thing) with nothing to scare away, say, your parents from loving it. If you gave that album to them they would probably bring it out every Christmas and Holiday season until they died.
