I had a fancy $150 ceramic pan. After just a few uses, even with oil, it would stick horribly. Tried cleaning it with all kinds of stuff, nothing worked. Went back to the store with it, the manager had the same pan at home, had the same problem. Got my money back.
Teflon may be vulnerable, but it works. Treat it right, don't overheat it, use plastic or softer tools, and it'll last ages.
Now I use teflon pans with automatic heat limit so they're impossible to overheat.
My opinion on cooking without oil? FUCK cooking without oil. The oil doesn't just prevent sticking, it distributes the heat into the food waaay better. But oil is bad for you? No it isn't, just use the good stuff, like peanut or coconut that can take high heat without giving you cancer and AIDS.
