Parrying is still a total mystery. Have yet to pull one off. You just tap the block button before an attack hits then go with a normal attack?

No. Definitely not. You want the button underneath the block button, which is parry on med-small shields/most weapons in left hand and shield bash on heavy shields. So L2. Criteria for successful parry and riposte:
Parry
1. correct frames: Every attack has a windup and execution animation. Once you are looking for it, you can usually tell the difference. Faster attacks are harder for obvious reasons, but the pacing of really slow attacks can also throw you off. Anyway, the proper timing is as close to the start of the attack portion, not the windup. Now, here's the tricky part: your parry also has two phases: the parry itself (usually like 5-7 frames) and the parry recovery, which is 2-3 times as long. You need to sync up the enemy attack with your parry, not your parry recovery.
2. proximity and facing: regardless of the enemy weapon, you want to be as close as possible. All parries will fail past a certain distance. You want in the front 180 degrees of the opponent, but facing him as directly as possible. You can use this to your advantage with a longer range weapon against enemies that have a clear parry stance, as you can swat away at them from range and watch their parries fail.
3. elevation: uneven terrain works fine for backstabs. The parries may work, but the ripostes are almost certain to fail without predictable outcomes. Avoid stairs and slopes. Some areas, like the rotating stairs in Anor Londo, completely nullify parries and ripostes regardless of whether you stand on the stairs or the flat parts, for reasons connected to the programming of a moving platform; I believe that is also true for elevators.
Riposte
1. When you successfully parry, you'll hear a dramatic sound, akin to when you do all of an enemy's hp or more in damage on a backstab. You'll also see a special animation on them where they are left wide open. That's your cue to step in a bit and hit R1 to execute a riposte. Again, you must be close before hitting R1 and on flat ground. Also, realize it's much more time than it seems: you can actually switch to 2h stance and do the R1 then, with a few frames to spare, if you have the kind of weapon (one with a strength scaling bonus) that benefits from 2h damage boosts). You can't do it with R2.

Other than that, there are some weapons you won't see much, like whips, that can't be parried. Arrows and bolts can be parried, but obviously there's no riposte. Actually, just ignore all the text I just wrote and watch this.

Still at a total loss on how multiplayer works. Levels? Phantoms? Wraiths? Banish items?

If you're human *and* your boss for that area is alive, you can be invaded by red phantoms (Darkwraiths) and blue phantoms (Darkmoon). Red phantoms invade anything higher level or equal within a certain range, and Darkmoons invade down within a range but have all kinds of fucked up restrictions (and you have to have collected sin by killing NPCs and the like). The forest area has its own special invasion covenant, which has an incredibly broad level range in both directions and is designed for people to have 2v2 pvp and the like; you can prevent that by joining the covenant while you are doing stuff there (and it's fun if griefy at times, and has a great reward for winning 3 invasions); you can still be invaded by both Darkwraiths and Darkmoons, although the latter will be hard to distinguish from Forest Covenanters. You can have up to 3 invaders, iirc, depending on circumstance.

If you're human and your boss for an area is alive, you can summon white phantoms (any covenant) or yellow phantoms (sun brotherhood) to help you. For this to work, the level range is calculated from the summonee's perspective (as with PvP covenants, the one "using" the multiplayer item is the factor that determines their level range access), and is +/- (ten levels + 10% of soul level). So a level 30 character can be summoned by people from level 17 to level 43. There is no real difference between doing this as a sunbro or not except that as a sunbro you get a medallion for each victory which you can trade to your altar for faith spells. They are pretty decent, long range faith spells. But they are still faith. You can have up to two allies, including NPC summons. If you have both allies and invaders in play, the hard cap on multiplayer is 4 + 1 (host).

The last type is the gravelord covenant, which infects NG+ worlds with ridiculous red phantom NPCs and carries a moving summon sign so up to all four of his infected can invade him and kill his ass for doing it. It doesn't work well for structural reasons (the gravelord can't kill his own bosses to infect an area) and because of the limited pool and vast level range of NG+ characters, not to mention the extra shittiness of the netcode.

Note: both summoning and invading can happen and fail at the same time, as they are both triggered by being human. Failure is a function of shitty netcode and not an intended gameplay aspect. Sometimes you'll have a bonfire go out with no invasion warning, then come back a few seconds later. That's a failed invasion. Sometimes, you'll just hear the invasion sound and not see the sign pop up; you have still been invaded, so prepare for the worst by retreating to your last bonfire or some other place you think you can win the fight or retrieve your souls if you get fucked. There is no courtesy on not ganking the shit out of invaders that interrupt you in pursuit of PvE; do whatever it takes. You can also elect to duel them fair and square with a little bow and the whole thing, which typically leads to very different "some holds barred" fights where opponents avoid using shiteater mechanics to fuck you (notable ones: tranquil walk of peace, force/wrath of the gods spam, etc...notice they are faith? also the new physical magic from the DLC is widely regarded as unsporting). I like both kinds of invasions and really only dislike invaders that go after PvEers without any sense of proportionality. I don't get the point of one-shotting people with a cheap tactic, but clearly some do.

Realize that both parrying and backstab (and everything else) are going to be affected by lag. It's a skill with defined parameters, but don't confuse proficiency in PvE timing without lag for proficiency in PvP timing with excessive lag.
