I wish that interviewing people was easier
The way we do it at my office is basically to put people through a several-hour wringer and then get together afterward to see whether we liked them as a person. Let's put it in D&D terms: your CHA stat is way more important than your INT or your WIS stat. We will reliably hire people with zero experience as long as they seem fun to be around, and just as reliably will pass on people with excellent technical skills that don't have "culture fit" which means that the interaction was uncomfortable for whatever reason. The "too nervous" thing is most definitely treated as a red flag and I find it infuriating. Other red flags include being overly nice, having too strong an accent for people to understand and my personal favorite: responding to the question of "what would have to change for you to want to remain at your current job?" by saying something negative about your current employer (disloyal).
