But I'm seeing a lot of flavors that don't necessarily marry well, raw or cooked. Celery + parsley goes one way, parmesan goes another, hot sauce sits uncomfortably on both. Grapeseed oil just kind of floats above any identifiable category here. And you microwaved garlic. I would probably eat this if you served it to me, but I wouldn't ask for seconds, I would cut Group A to: Corn Peppers - throw in a little jalapeno maybe Cilantro instead of parsley Salt & pepper Group B: Lime juice/hot sauce Sunflower/safflower/corn oil - the grapeseed oil isn't really buying you anything in the original recipe Cut a garlic clove in half and rub down the inside of your mixing bowl in it, then mix A & B together. Group C: assorted things you can add to spice this shit up. Use only one or two of them at a time, and do not overwhelm the corn. Grilled red onions Grilled green onions Grilled garlic Tortilla chip shreds (especially if it's the puffy crispy bits of fried flour tortillas) Blistered tomatoes (grill or pan-sear whole tomatoes til the skin is blistery, cut, de-seed, chop) Little watermelon cubes Shredded, julienned, or thinly sliced jicama Watercress Chopped mustard greens, raw or cooked Crispy bacon Grilled fajita meats [/quote]
