how would you take a classic Indian composition, with onions, cream, tomatoes, &c., and make it into something that won't give everyone in my house violent shits and/or ear infections? I think it is the best food in the world* and I have never figured out how to modify it so that it is safe for those who eschew bovine effluvia.
It depends on what kind of compromises you are willing to make, and the degree of lactose intolerance in your soi-disant housemates. The short list of Things To Substitute: * Almond or cashew milk - to make these, grind almonds or cashews, then soak the ground nuts in water for a day or two. Leave it out overnight the first day then stick in the fridge. Strain through cheesecloth and keep in a sealed container in the fridge.
